1. Raw material screening and cleaning
The production of french fries starts with high-quality potatoes. Factories usually work with farms to select varieties suitable for French fries. After entering the factory, the potatoes will undergo preliminary screening on the conveyor belt to remove bad or unqualified potatoes.
 
2. Peeling and cutting
After washing, the potatoes will enter the peeling machine, where the skin will be removed by rotating drums or steam high pressure technology. The peeled potatoes will pass through an automatic cutting machine and be cut into standard-sized french fries. Common cutting methods include straight strips, wavy strips, etc.
 
3. Pre-cooking and blanching
The cut fries are briefly heated in hot water or steam, a process called blanching, which removes excess starch and prevents the fries from sticking together during frying. It preserves the color and prevents the fries from oxidizing and changing color. It changes the texture and makes the fries softer and more delicious after frying.
 
4. Pre-frying and cooling
After blanching, the fries will enter the fryer and be pre-fried for a short time (usually around 170°C) to form a crispy shell and lock in the moisture inside.
 
5. Quick freezing
In order to ensure the freshness and taste of french fries, they are quick frozen after pre-frying, and the temperature is reduced to below -18°C. Quick freezing can effectively extend the shelf life and prevent french fries from deteriorating during transportation and sales.
